Veggie Sandwich

I made a really tasty sandwich the other day. I call it...find things in the fridge and put them between bread!

I toasted two pieces of country white bread. Ok, side thoughts...what exactly is "country white"? Do they just mean "rolled it in flour at the end so the crust looks fancy"? And I always feel so guilty eating white bread. I should be eating some kind of healthy wheat bread. But personally, I hate wheat bread. Lou described it perfectly the other day when we were sharing our disliking - "why is there always nuts and random crunchy shit in it?". So true. I'm still open to finding a good wheat bread. I just want it to taste like white bread, and not dominate the whole sandwich flavor. In my eyes, the bread is just an edible plate in which the tasty bits sit upon. I saw in the store once that there's something called "white" wheat bread. Does it taste like white bread or just look like white bread? And is that cheating? Who am I trying to kid?

Ok I'm getting side tracked now. The rest of the tasty layers were as follows...



cucumber dill feta dip (it said Greek Yogurt Veggie Dip on the container)
baby arugula
tomato
avocado (mmm...so creamy and delicious)
grilled onions
grilled asparagus
balsamic vinegar

I had a hard time closing the sandwich. Don't ask me why I piled awkward layers on both pieces of the bread. But in the end, it came out looking sandwichy, and tasted even better!

That looks delish! And healthy! We like HONEY wheat. It's not "real" wheat. I just bought a loaf of "real" wheat since Kurt had those health issues. Not so good. I think there's a big difference in brands and you have to experiment.

hmm I'll have to try that. It's so hard to gamble on a WHOLE loaf of bread!
