pretend salsa.


I was just about to sit down and do some painting when I realized I didn't have a water cup. I usually use a Solo cup until it's too cruddy with old paint and then I throw it out and get a new one. But due to my garbage disposal overflowing mishap, all of my Solo cups (living "safely" in the cabinet under the sink..) had to be thrown out because they were covered in lettuce chunks and gray murky water. I didn't want to ruin a good drinking glass so I decided the next best thing is a can. But of course all of my cans are full of condensed soup and various vegetables.
So I took this opportunity to whip up some "pretend salsa". By pretend I mean not fresh tomatoes. It was super fast and easy.

1 can diced tomatoes (I included as much juice from the can as needed to keep the salsa from getting too watery)
half an onion chopped
1 cloved of garlic minced (i use the minced garlic from the little jar)
a little bit of jalepeno chopped (from a jar..not the pickled kind)
a pile of cilantro chopped (seriously..a pile..I love cilantro)
salt and pepper

I mixed that all together in my favorite lime green tupperware container and in an hour when all of the flavors meld I'll be in super simple salsa heaven. Salsa is great to make because it's so versatile. You can add and subtract anything to fit your taste. To really make it kick ass, it would be nice if I had some fresh lime juice to add. ..tis next time.

Hopefully by next time my tomato plant will have a few good fruits to share. Check out this photo of the growth progress. It's unbelieveable. Once the plant outgrew the height of the wire I had surrounding it, it drooped down and then started growing up again towards the sun. Don't mind the crappy box and bag next to the plant. It was the only thing I could find that was heavy enough to hold the wire in place to keep the tomato plant from falling over..!

thank ya's! I'm eating it right now and it's mmm mmm delish. And due to my lack of self control I think I'm going to finish it in one sitting. Ah well!

Sounds delish. I love cilantro too. That tomato plant is amazing! We got our first green pepper today.

it was a horror story! it was in the cabinets, in the pots and pans...everywhere! It was actually very comical..I'll have to blog about it later.
